Wonton Pizza Mozza Sticks

Wonton Pizza Mozza Sticks:

Mozzarella Cheese
Pepperoni Slices
Wonton Wrappers
Oil for frying
Pizza Sauce for dipping





Cut cheese into strips about 2 inches long and 1/2 cm thick. Wrap a slice of pepperoni around a cheese stick. Place the pepperoni and cheese combination near the bottom of a wonton. Fold bottom corner up and roll up about half way; fold sides in towards the center. Moisten the remaining corner of the wonton with water; roll up tightly to seal.
Continue with remaining wontons, cheese and pepperoni.
These can now be fried or put into the freezer for a later date. To freeze place on a tray lined with wax paper. Once frozen they can be placed in a freezer ziploc bag.

Heat oil to 375 degrees. Fry a few sticks at a time for 30-60 seconds per side. Set on paper towel to absorb any extra oil. Serve with pizza sauce.

Such a quick appetizer to make. These can also be made with bacon bits sprinkled on top of the cheese or without any meat and just the cheese.

Roll Kuchen

Roll Kuchen:

3 cups flour
2 tsp salt
1 heaping tbsp baking powder
4 eggs
1 cup cream
1 cup sour cream
1 cup flour

Sift together 3 cups flour, salt and baking powder. Add eggs, cream, and sour cream. Mix well and gradually add in the last cup of flour. Refrigerate for at least an hour. Roll out on a countertop that has been sprinkled with flour. Cut into strips. A pizza cutter works well for this. Cut slits in the middle of each strip. Fry in hot oil until both sides are golden brown. Place in a cookie sheet lined with paper towel to absorb excess oil. Sprinkle with additional salt or icing sugar if desired. Serve with watermelon. 


Homemade Onion Rings

 

Homemade Onion Rings:

1 egg
2/3 cup milk
1 tbsp oil
1 tsp lemon juice
1 cup flour
1 1/2 tsp baking powder
1 tsp salt
1/4 tsp paprika
2 large onions

Slice onions and separate into rings. Place in bowl; cover with cold water and soak for 30 minutes. Mix all other ingredients together to make a batter. Drain onions and dip into better. Fry in hot oil for about 1 minute per side or until golden brown. Drain on paper towels.

Chewy Puffed Wheat Squares

Chewy Puffed Wheat Squares:

1/3 cup margarine 
1/2 cup corn syrup
1 cup brown sugar
1 tsp honey
1 tsp vanilla
1 1/2 tbsp peanut butter
2 tbsp cocoa
7-8 cups puffed wheat

Melt margarine in a saucepan on medium heat. Add in the next 6 ingredients. Stir just until mixture begins to boil. Remove from heat. Allow to cool slightly before pouring over the puffed wheat in a large bowl. Mix well and press firmly into a greased 9 x 13 pan. Allow to cool before cutting into squares.
This freezes well.

Crunchy Taco Wrapstars


 Crunchy Taco Wrapstars

2 cups prepared Taco Meat
8 Large Tortilla Wraps of choice
2 cups shredded cheese 
1/2 cup cheese sauce*
1 bag Doritos of choice**
Salsa(optional)
Sour Cream(optional)

*I like to use the co op version of cheese whiz
**I like to use nacho or cheese doritos but the chili heat ones are good as well if you like a little bit of spice. Cheetos are also good.



Spread 1 tbsp of cheese sauce into a 4 inch circle on your wrap. Sprinkle a handful of crushed chips on top of the cheese followed by about 1/4 cup of taco meat and 1/4 cup of shredded cheese.
Fold the edges of the tortilla into the centre of the wrap as shown below.
Place the wrap seam side down onto a nonstick pan and fry on medium heat for 3-4 minutes or until desired brownness. Flip and proceed to fry the other side for about 3-4 minutes as well.
Remove from heat. Serve with salsa and sour cream if so desired.

This is really handy to send along to school for lunches or for my husband to take along to the farm. He even likes eating them cold. Sometimes I make them in the evening and place them into the foil hamburger bags after they have been cooled so they are ready to grab from the refrigerator in the morning.

Homemade Oreo Cookies

Homemade Oreo Cookies

2 boxes chocolate cake mix
4 eggs
1/2 cup butter
1 tsp vanilla

Frosting

4 oz Cream Cheese, softened
1/4 cup butter, softened
3-4 cups icing sugar

  Mix cookie ingredients together. Roll into 1 inch balls. Place on cookie sheet. Flatten slightly. Bake at 350 for 12-15* minutes. Cool.
Combine the softened cream cheese and butter with 1 cup of icing sugar. Mix well. Gradually add in the remaining icing sugar 1/2 a cup at a time until desired consistency.
Apply generous amount of icing in between 2 cookies to create a sandwich.

*The icing will soften up the cookies as they sit so it is ok if they are slightly on the hard side. You definitely don't want to underbake them.

Cajun Chicken Salad

Cajun Chicken Salad

3-4 chicken breasts
1 tsp Cajun Seasoning
1/2 -1 package Bacon
1 Large Head Lettuce
1 cup shredded Marble Cheese
1/4 cup Parmesan Cheese(optional)
1 small bag of Hickory Sticks

Dressing

Mix together:
1 cup Ranch Dressing
1 tsp Cajun Seasoning
1 tsp Hot Sauce


Cut chicken into bite sized pieces. Fry until almost tender. Add Cajun Seasoning and continue to fry until done. Remove from heat. Dice and fry bacon. Drain grease and cool. 
Cut up the lettuce and put into a salad bowl. Mix together with the cooled chicken, bacon and cheeses. You can choose to add the Hickory Sticks and dressing directly into the salad and mix it together.* But I like to dish out the salad so that everyone can sprinkle desired amounts of Hickory sticks on top and drizzle with dressing.

*you might not need to use all of the dressing. 

Homemade Caramel Sauce (Pancake Syrup)

Homemade Caramel Sauce

 (Pancake Syrup)

1/4 cup Butter/Margarine
1/2 cup Brown Sugar
1/2 cup White Sugar
1/2 cup Whipping Cream

Put all ingredients into a small saucepan. Bring to a boil and remove from heat.

We love using this sauce on pancakes, cinnamon rolls and as a doughnut glaze. So delicious!!

Dirty Rice

Dirty Rice:

2 cups dry Jasmin or Basmati rice
1/4-1/2 cup melted butter/margarine OR oil
4 cups hot water
1 package onion soup mix
1 tsp Salt 


Mix together in a casserole dish. Cover. Bake at 350 for 45 minutes.
One of my favorite go to side dishes when I have a lot going on. So easy to make and tastes so good!

Corn Dogs

Corn Dogs

1 cup cornmeal
1 cup flour
1/2 tsp Salt
2 tsp Baking powder
2 tbsp Sugar
1 egg, slightly beaten
2 tbsp oil
1 cup milk
12 wieners
Wooden sticks

Mix cornmeal with remaining dry ingredients. Add egg and milk. Blend in oil. Mix well. Cut wieners in half lengthwise(optional). Insert stick into wieners. Dip in batter to lightly coat the entire wiener. Deep fry until floating and golden brown. Serve with ketchup and mustard.
