Homemade Oreo Cookies

Homemade Oreo Cookies

2 boxes chocolate cake mix
4 eggs
1/2 cup butter
1 tsp vanilla

Frosting

4 oz Cream Cheese, softened
1/4 cup butter, softened
3-4 cups icing sugar

  Mix cookie ingredients together. Roll into 1 inch balls. Place on cookie sheet. Flatten slightly. Bake at 350 for 12-15* minutes. Cool.
Combine the softened cream cheese and butter with 1 cup of icing sugar. Mix well. Gradually add in the remaining icing sugar 1/2 a cup at a time until desired consistency.
Apply generous amount of icing in between 2 cookies to create a sandwich.

*The icing will soften up the cookies as they sit so it is ok if they are slightly on the hard side. You definitely don't want to underbake them.

Cajun Chicken Salad

Cajun Chicken Salad

3-4 chicken breasts
1 tsp Cajun Seasoning
1/2 -1 package Bacon
1 Large Head Lettuce
1 cup shredded Marble Cheese
1/4 cup Parmesan Cheese(optional)
1 small bag of Hickory Sticks

Dressing

Mix together:
1 cup Ranch Dressing
1 tsp Cajun Seasoning
1 tsp Hot Sauce


Cut chicken into bite sized pieces. Fry until almost tender. Add Cajun Seasoning and continue to fry until done. Remove from heat. Dice and fry bacon. Drain grease and cool. 
Cut up the lettuce and put into a salad bowl. Mix together with the cooled chicken, bacon and cheeses. You can choose to add the Hickory Sticks and dressing directly into the salad and mix it together.* But I like to dish out the salad so that everyone can sprinkle desired amounts of Hickory sticks on top and drizzle with dressing.

*you might not need to use all of the dressing. 

Homemade Caramel Sauce (Pancake Syrup)

Homemade Caramel Sauce

 (Pancake Syrup)

1/4 cup Butter/Margarine
1/2 cup Brown Sugar
1/2 cup White Sugar
1/2 cup Whipping Cream

Put all ingredients into a small saucepan. Bring to a boil and remove from heat.

We love using this sauce on pancakes, cinnamon rolls and as a doughnut glaze. So delicious!!

Dirty Rice

Dirty Rice:

2 cups dry Jasmin or Basmati rice
1/4-1/2 cup melted butter/margarine OR oil
4 cups hot water
1 package onion soup mix
1 tsp Salt 


Mix together in a casserole dish. Cover. Bake at 350 for 45 minutes.
One of my favorite go to side dishes when I have a lot going on. So easy to make and tastes so good!

Honey Dill Dipping Sauce

Honey Dill Dipping Sauce:

1/2 cup mayonnaise
2 tbsp melted or liquid honey
1 tsp dill

Mix together and store in refrigerator.

Corn Dogs

Corn Dogs

1 cup cornmeal
1 cup flour
1/2 tsp Salt
2 tsp Baking powder
2 tbsp Sugar
1 egg, slightly beaten
2 tbsp oil
1 cup milk
12 wieners
Wooden sticks

Mix cornmeal with remaining dry ingredients. Add egg and milk. Blend in oil. Mix well. Cut wieners in half lengthwise(optional). Insert stick into wieners. Dip in batter to lightly coat the entire wiener. Deep fry until floating and golden brown. Serve with ketchup and mustard.

Drumstick Cake

Drumstick Cake:

-2 1/4 cups Graham Wafer or Oreo Crumbs
-1/3 cup melted Butter/Margarine
-2 tbsp melted Peanut Butter
-8 oz softened Cream Cheese
- Large tub Cool Whip
-1/2 cup Sugar
-1/2 cup Peanut Butter
-Chocolate Sauce
-Crushed peanuts(optional)

Combine your choice of crumbs with the melted butter/margarine and melted peanut butter. Reserve 1/4 cup of this mixture. Press remaining crumbs into a 9 x 13 pan. 
Mix together the sugar, peanut butter and the cream cheese. Add cool whip. Mix well. Drop by spoonfuls onto the crumb base. Spread out carefully. Sprinkle the reserved crumbs on top as well as crushed peanuts if you choose and drizzle some chocolate sauce on top.  Put into a freezer for several hours before serving.
